Quote of the day.

Monday, Monday...oh you've come to soon. This morning was rather interesting, I was out on my run and got chased by a stray dog. This Greek woman was trying to warn me but since she was speaking Greek and I had no clue what she was saying as she screamed in my direction, I was quite surprised when what looked like "The Beast" from Sandlot came running after me. Lets just say the last few minutes of my run was a sprint back to my apartment.

Sorry to all the NY Jets fans, wish the outcome to the game was different but there is always next year. I will now be cheering on the Packers because there is no way in hell I'd cheer on Ben Roethlisberger.

Today's quote is from an unknown author. The quote basically lets us know that life is short and you should enjoy it.

Enjoy and to all my New Yorkers STAY WARM!

Life is too short. Laugh when you can, apologize when you should, & let go of what you can't change. Love deeply & forgive quickly. Take chances, give everything. Have no regrets. Life is too short to be unhappy; you have to take the good with the bad. Smile when you're sad, love what you got, & always remember what you had. Always forgive, but never forget. Learn from your mistakes & always remember life goes on.

Beautiful.

My brother has always had an artistic eye, and the video he recently put together is simply beautiful. He filmed this all on his Nikon D5000 Camera and the quality is amazing. The clips are from the past couple of months. It's great to see that even though my family is spread out all over the world, we are always together at heart.

I miss them dearly and I now have this video to watch at my disposal everything I am missing home. My favorite clip is at the very end and had me bawling.

The song in the video is call "goodnight" by Danny Norbury.

Enjoy!

Quote of the day.

Happy Sunday Beautiful Babies, I love Sunday so much, I know I profess that a ton but there is just something about this day of the week that makes me feel so good.

Big things going on today, first off a big Happy Birthday to my favorite brother Brendan, I hope you have an amazing day. Secondly, I want to send a lot love to Mackenzie Long on the day of her baptism, I wish I could be there today but my love is with you. Lastly, The Jets are playing tonight to go to the SUPERBOWL, yikes wishing this New York team lots of luck.

Today's quote is from Joe Namath, the famous New York Jets quarterback, I thought this quote was fitting for today. Go Jets!

Enjoy.

When you have confidence, you can have a lot of fun. And when you have fun, you can do amazing things.

Quote of the day.

Happy Saturday Loves,I had the most amazing run this morning and I'm feeling so determined these past few days. I'm about to head out to my manfriend's basketball game and I didn't want to forget a quote for everyone to enjoy like I did last weekend.

This quote is from an unknown author, and it is a real motivator.

Enjoy!

To those of you who have pushed me, thank you- without you I wouldn't have fallen.
To those of you who laughed at me, thank you- without you I wouldn't have cried.
To those of you who just couldn't love me, thank you- without you I wouldn't have known real love.
To those of you who hurt my feelings, thank you- without you I wouldn't have felt them.
To those of you who left me lonely, thank you- without you I wouldn't have discovered myself.
But it is to those of you who thought I couldn't do it-- it is to you I thank the most because, without you I wouldn't have tried.

That's Amore.

I decided to try making some Italian food the other day and man, oh man was it fun. I am from Staten Island where everyone and their dog happens to be Italian, except for me though, my family isn't an ounce of Italian but that doesn't mean we don't enjoy a good sauce or a meatball every now and then.

I figured I would start off easy on my Italian cooking journey and make some homemade bruschetta and chicken parmesan heros. I went to the grocer next door and got everything I needed to make an Italian feast.

When I came back to the apartment I youtube'd how to make bruschetta, followed the simple directions and voila the bruschetta was finished. The chicken parmesan hero was also fun to whip up, and pretty easy. I am learning that cooking isn't really that hard as long as you have all of the ingredients, patience and a nice glass of wine always helps as well.

When my manfriend came home from his practice he was very impressed with what I prepared. He  went on to impressed me by making some yummy garlic bread to go along with the bruschetta. Our Italian friends would be very proud of us, and I think this meal could of earned me a spot on the Jersey Shore.

Here's how it went down in the kitchen.

Bruschetta
You can use three to five large tomatoes to make a decent batch of bruschetta.

 Dice the tomato into cubes.

Chop up some red onion. I used one whole onion, depends on what you like.

Your going to add olive oil and balsamic

Mix it up really well.
I let it sit in the refrigerator for about three hours, so that the tomatoes really soak in the balsamic.

Kyle made garlic bread, using whole wheat bread, butter, olive oil, garlic and grated cheese.

Add the bruschetta to the garlic bread and you are good to munch.

Chicken Parmesan Hero
Slice some fresh mozzarella. This stuff is so good!

Get yourself a nice loaf of Italian bread. For the carb conscious, you can gut the inside.

After cooking up some chicken cutlets on the pan, place them on your hero and add the fresh mozzarella.

Bake until cheese is melted and bread toasted.

 Add some marinara sauce.

And you have yourself a Hero!

Cooking can be a blast, especially when you get to enjoy the end result.

Quote of the day.

Oh Friday, how I love you!

Today's quote is from author Sarah Dessen. This is such a great quote and really puts life in perspective. One of the most important things in life is to be yourself, do your own thing, stop competing with others, your greatest competition is yourself. Be brave, take chances, be great, be you.

Enjoy!

It made me realize that even when everyone is doing the same thing, we all do it differently. Some faster, some slower. Some with ease, some with great difficulty. But the thing is, you can't compare yourself to how anyone else is doing. What matters is your race, not how everyone else is running it.

Annie is Catty.

Anne Hathaway has been selected to play Catwoman in the next Batman installment,  The Dark Knight Rises. Director Christopher Nolan said that Anne would be a "fantastic addition to our ensemble as we complete our story."

Hathaway will be acting alongside Christian Bale as he reprises his role as the Cape Crusader. In the past Michelle Pfeiffer portrayed Catwoman in the Tim Burton directed, Batman Returns. While Halle Berry stared as the sexy feline in 2004's Catwoman. Those are some major leading ladies, but I think Annie is a great fit for the role.

Do you think Anne has what it takes to be Catwoman?
